To make Corn Spinach Quesadilla you need
2 chopped garlics ,1 onion chopped
1 sweet corn boiled ( half churn and half pilled ), 1 green chilly
½ cup chopped coriander, 1 cup chopped spinach
2 tbsp. mayonnaise, some cheese, 4 tortillas
4 tbsp. oil
Heat the pan and add some oil to it. sauté onion, garlic, and chilly, adding some salt to it.
Add corn to the onion and cook for some time.
Add coriander and spinach and cook till it becomes soft.
Add mixed herbs in to it.
Let the mixture cool down. Add some mayonnaise to the mixture.
Take the grill pan and brush some oil on it .
Place 1 tortillas on it.
Spread some stuffing on half tortilla, shred some cheese n fold it.
Cook both the side.
Serve with some salad.

Eggless Chocolate Walnut Brownie:
Craving for chocolatey, fudgey & chewy brownie, well here it is the classic eggless walnut brownies home-made & so easy.
Serve it warm with ice cream or just have it with coffee or mix it in milk shake. This classic versatile brownie is one size fits all.
Bon Appetite !
Melted Chocolate 3/4th Cup (Use Measure Cup)
Butter at Room Temperature 1/2 Cup
1.1/2 Cup Maida (Plain Flour)
1 tsp Baking Powder
1 cup Castor Sugar
1 tsp Vanilla Essence
1 tsp Coffee Powder (optional)
1/2 cup milk.
Handful of Walnuts.
Oil for greasing the baking tray.
Butter paper to line the baking tray.
In a bowl, take melted chocolate 3/4th Cup
Add butter at Room Temperature half cup
Since chocolate is warm, butter will melt easily.
Mix it nicely.
Pre-heat oven at 180 degree for 10 minutes pre-heating.
We wil bake brownie for 18-20 minutes.
Add mixture of 1.1/2 Cup Maida & 1 tsp Baking Powder
Add 1 cup Castor Sugar.
Mix it well.
Add 1 tsp Vanilla Essence.
Mix it well.
I love mixing coffee flavour with chocolate.
Coffee enhances the chocolate flavour.
So will add 1 tsp of coffee powder
The mixture is still stiff.
Add 1/2 cup of milk
Mix it well.
Take Walnuts & Chop them.
Don't finely chop. Leave chunks.
Mix walnuts into the batter.
Have kept the Baking Tin ready, by greasing with oil & lined with butter paper.
Butter paper helps in de-moulding brownie post baking.
Pour the mixture in baking tray.
Spread it evenly.
Put the tray in oven for 20 minutes at 180 degree temperature.
Take out the tray from the oven.
Let it come to room temperature.
Now de-mould it. It will come out very easily.
Eggless Walnut Brownie is ready.
Serve it little warm and with ice-cream or have brownie with black coffee.
