(Gujarati Jain Recipe for Mango Season)
Don’t throw away mango skin & seed. You can make Fajeto from the pulp leftover on the mango skin & seed. Enjoy this Jain Special Fajeto, Mung Daal and Rice this Summer Season. Sharing the simplest recipe on chefmeghna.com
4 Ripe mangoes’ left over skin and seeds
Oil / Ghee
Kadi patta (curry leaves)
Turmeric powder ( Haldi)
Sugar and Salt per taste
Pre-soaked Mung Daal
Take left over of 4 ripe mangoes.
After you take out mango pulp for aam ras (mango juice),
you are left with the skin and the seed of mango.
Fajeto is made from the pulp leftover off the mango skin and seeds.
Squeeze out the remaining mango pulp from the mango skin and the seeds into 2 cups of water.
You will get thick mango pulp flavored water.
Keep this water aside.
In a pan, Take 2 tsp oil or ghee
add 1/2 tsp cumin seeds and some mustard seeds
add a pinch of asafetida
Once the mustard seeds & cumin seeds crackle, add kadi patta (Curry leaves)
Now add 1/4 tsp turmeric powder (haldi) & 1 tsp chili powder
Salt as per taste.
Now add the mango flavored thick water (kept aside earlier)
add 2 tsp sugar (as per your taste)
Bring it to boil
Fajeto is ready; it's usually watery consistency (like Rasam).
Sometimes Fajeto can also be made with Curd & Chickpea flour, but it's a different recipe.
You can enjoy Fajeto with rice and dry mung daal.
To make Mung Daal,
Cook pre-soaked mung daal with very little water, salt & turmeric powder (haldi).
Bring it to boil. Keep taking out the white color froth that keeps coming out of mung daal.
Cook till it's almost done.
For Tadka on daal - take oil, add asafoetida & red chili powder.
Add this tadka on top of Mung Daal & cook till daal gets cooked properly. Love M

Eggless Chocolate Walnut Brownie:
Craving for chocolatey, fudgey & chewy brownie, well here it is the classic eggless walnut brownies home-made & so easy.
Serve it warm with ice cream or just have it with coffee or mix it in milk shake. This classic versatile brownie is one size fits all.
Bon Appetite !
Melted Chocolate 3/4th Cup (Use Measure Cup)
Butter at Room Temperature 1/2 Cup
1.1/2 Cup Maida (Plain Flour)
1 tsp Baking Powder
1 cup Castor Sugar
1 tsp Vanilla Essence
1 tsp Coffee Powder (optional)
1/2 cup milk.
Handful of Walnuts.
Oil for greasing the baking tray.
Butter paper to line the baking tray.
In a bowl, take melted chocolate 3/4th Cup
Add butter at Room Temperature half cup
Since chocolate is warm, butter will melt easily.
Mix it nicely.
Pre-heat oven at 180 degree for 10 minutes pre-heating.
We wil bake brownie for 18-20 minutes.
Add mixture of 1.1/2 Cup Maida & 1 tsp Baking Powder
Add 1 cup Castor Sugar.
Mix it well.
Add 1 tsp Vanilla Essence.
Mix it well.
I love mixing coffee flavour with chocolate.
Coffee enhances the chocolate flavour.
So will add 1 tsp of coffee powder
The mixture is still stiff.
Add 1/2 cup of milk
Mix it well.
Take Walnuts & Chop them.
Don't finely chop. Leave chunks.
Mix walnuts into the batter.
Have kept the Baking Tin ready, by greasing with oil & lined with butter paper.
Butter paper helps in de-moulding brownie post baking.
Pour the mixture in baking tray.
Spread it evenly.
Put the tray in oven for 20 minutes at 180 degree temperature.
Take out the tray from the oven.
Let it come to room temperature.
Now de-mould it. It will come out very easily.
Eggless Walnut Brownie is ready.
Serve it little warm and with ice-cream or have brownie with black coffee.

To make Corn Spinach Quesadilla you need
2 chopped garlics ,1 onion chopped
1 sweet corn boiled ( half churn and half pilled ), 1 green chilly
½ cup chopped coriander, 1 cup chopped spinach
2 tbsp. mayonnaise, some cheese, 4 tortillas
4 tbsp. oil
Heat the pan and add some oil to it. sauté onion, garlic, and chilly, adding some salt to it.
Add corn to the onion and cook for some time.
Add coriander and spinach and cook till it becomes soft.
Add mixed herbs in to it.
Let the mixture cool down. Add some mayonnaise to the mixture.
Take the grill pan and brush some oil on it .
Place 1 tortillas on it.
Spread some stuffing on half tortilla, shred some cheese n fold it.
Cook both the side.
Serve with some salad.

One of the most popular street food in Pakistan and world famous "Egg Roti" is now on Meghna's Food Magic.
Takes just a few minutes of your time, a pre-preparation of omelette and a Plain Homemade Roti.
1 Homemade Plain Chapati (Roti)
Finely chopped Onion (Green onion)
Finely chopped chilli
Finely chopped coriander leaves
Tomato Ketchup (Optional)
Cheese shredded (Optional)
Take a homemade roti.
Make a small cut on the side top & create a pocket
Now time to make omelette mixture
Break open an egg.
Start heating the pan.
Stir the egg nicely
Add chopped onion
Add chopped chilli
Add chopped tomatoes
Add chopped coriander
Mix the egg mixture.
Drizzle some oil on the pan
Now place the Roti on the pan
Let it warm up a bit from one side
Take egg mix in a pouring jar.
Now lift the top of roti where you made a pocket cut earlier
Slowly start pouring egg mix in it
We want to make sure egg spills into all part of roti
Drizzle some oil on the top
Cook from both sides
Be gentle while cooking this.
And Egg roti is ready.
Serve Egg Roti with some Ketchup

Cream cheese OR Hung Curd
Roasted cumin seeds powder (Bhuna Jeers Powder)
Olives chopped (in ring shape)
Take couple of watermelon cubes
Make a cavity on top with a watermelon scooper or spoon.
In a separate bowl, take cream cheese (or Hung curd)
Mix salt, pepper & roasted cumin seeds powder
Mix it well.
Use a piping bag and fill the watermelon top
Topple with the olives and onion greens
Watermelon Bites are ready to be served.
